9" Chef Knife for Cafe Olya

This 9" chef knife was custom designed and hand crafted for proprietors Mike Tasso and Olyana Zhuk of Cafe Olya located at 540 Parliament Street in Cabbagetown, Toronto, Ontario, Canada.  The blade was hand forged from 1084 high carbon steel.  The handle is made from douglas fir salvaged from a building previously located at Yonge and Bloor.
I hope this knife will assist Mike and Olyana in continuing to provide Cafe Olya's customers, friends and family with countless tasty and inspired culinary creations.

As I start to scratch the surface of knife sharpening,  I found that in terms of sharpening advice on the net - Murray Carter's website & youtube links at http://www.cartercutlery.com/ are some of the most insightful helpful info on the subject of free hand sharpening.
